Snip the leaves close to the stem, and avoid taking more than one-third of the plant at a time to ensure continued growth. Dill seeds can be harvested when the flower heads turn brown and the seeds are easily shaken off. Cut the flower heads and place them in a paper bag to dry completely before storing.
