The best time to harvest is when the plant has reached a height of about 12-18 inches. To harvest, cut the stems about 2 inches above the soil level to encourage regrowth. It is important to harvest in the morning when the plant is most turgid. Regular harvesting promotes continuous growth and prevents the plant from becoming too woody. Ensure that the plant is grown in well-drained soil and receives adequate water, especially in seasonally dry tropical climates.
Soil
Water spinach prefers loamy soil that is rich in organic matter. The soil should be kept consistently wet or even waterlogged. Good drainage is not a primary concern for this plant, as it can grow in marshy conditions.
